Pandi curry is one of the most loved dish in Coorg. The magical blend of spices leads to an unique pork dish which leaves an everlasting impression on your palate! Here's how the pandi curry is made in Coorg.
Ingredients:
Pork - 1 KG
Red chilly powder - 1 tsp
Turmeric powder - ½ tsp
Salt to taste
Procedure:
1) Wash and drain medium cut pork. Add turmeric powder, salt, red chilly powder and marinate for about 30 minutes. 2) Grind coarsely sliced onions, ginger, garlic, green chillies, coriander leaves together. 3) Take marinated pork in a thick bottomed vessel, add ground paste, mix well and cook in medium heat till soft. Then add Coorg Shoppe Pork Masala Powder, kachampuli (local coorgi vinegar) and cook for 5 to 10 minutes.
